Compiled of diced fresh mango, cucumber, onion, red pepper, and pineapple. Seasoned with cayenne and red pepper flakes, since fresh jalapenos were scarce in the house. I added lime juice for taste and pH balance, as well as 2 tablespoons apple juice since the mango lacked much of its own natural juices.
Serve with crisp tortilla chips for a refreshing treat.
