I love summer for many reasons, and a big reason is the food. Food in summer always seems to be made fresh, and I love it! Your pasta salad should be no different!
For a quick and satisfying meal: combine pasta, goat cheese, sliced red onions, sliced Roma tomatoes, arugula, and salami. Stir in the goat cheese while the pasta is still warm to ensure even coverage. Add olive oil and seasonings to suit your taste. I added salt, pepper, garlic powder, and cayenne to mine.
This is a great pasta salad served hot or cold. I took mine last night to the Denver Botanic Gardens and enjoyed a picnic with a friend!
